Ingredients
  

  • 1 large salmon fillet (about 300–350 g), cut into 2 portions
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 1 tbsp lemon juice
  • 1 cup broccoli florets
  • 1 medium carrot, sliced
  • bell pepper, sliced
  • Salt and black pepper to taste
  • Optional toppings: Sesame seeds, chopped parsley or green onions

Instructions
 

  • Preheat the oven to 200°C (400°F) and line a baking tray with parchment paper.
  • Arrange the broccoli, carrot slices, and bell pepper on the tray, then drizzle them lightly with olive oil and sprinkle with salt and pepper.
  • Place the salmon fillets on the tray among the vegetables with the skin side facing down.
  • In a small bowl, mix the honey, minced garlic, soy sauce, and lemon juice until well combined.
  • Spoon or brush the honey garlic sauce over the salmon fillets, making sure the surface is evenly coated.
  • Place the tray in the oven and bake for 12-15 minutes, depending on the thickness of the salmon.
  • About halfway through baking, you can brush a little more sauce over the fish to enhance the glaze.
  • Once the salmon flakes easily with a fork and the vegetables are tender, remove the tray from the oven.
  • Sprinkle sesame seeds or chopped herbs over the salmon if desired and serve warm.
