Preheat the oven to 200°C (400°F) and line a baking tray with parchment paper.
Arrange the broccoli, carrot slices, and bell pepper on the tray, then drizzle them lightly with olive oil and sprinkle with salt and pepper.
Place the salmon fillets on the tray among the vegetables with the skin side facing down.
In a small bowl, mix the honey, minced garlic, soy sauce, and lemon juice until well combined.
Spoon or brush the honey garlic sauce over the salmon fillets, making sure the surface is evenly coated.
Place the tray in the oven and bake for 12-15 minutes, depending on the thickness of the salmon.
About halfway through baking, you can brush a little more sauce over the fish to enhance the glaze.
Once the salmon flakes easily with a fork and the vegetables are tender, remove the tray from the oven.
Sprinkle sesame seeds or chopped herbs over the salmon if desired and serve warm.
